Day 1 Sunday, October 6: Chablis (L)

• It’s market day in Chablis!

•Meet at Chablis hotel at Noon

• Introductions and what’s coming in the week ahead

• Traditional French country feast: Dimanche Midi

• Tasting at France’s best cave cooperative

• Hotel in Chablis (2 nights)

• Dinner on your own (if still hungry!)

Day 2 Monday, October 7:

All about Chablis (B,L,D)

 Geology: What makes Chablis Grand Cru’s what they are

• Learn Chablis’ sweet spots: The Premier Cru vineyards

• And little known gems: Petit Chablis

• Gourmet picnic lunch among the Grand Crus

• Tasting at select Chablis wine house

• Explore Chablis itself - some free time before dinner

• Dinner in Chablis with its culinary specialties

Day 3 Tuesday, October 8:

Burgundy Auxerrois (B, L, D)

• Geology field trip to CDP vineyards, tasting at Domaine du Vieux Télégraphe (La Crau)

• CDP tasting and galets of the high terrace

• Picnic/lunch nearby

• Afternoon: Visit an unusual CDP vineyard

• Dinner at Les Florets, wines of Côtes-du-Rhône Villages & Châteauneuf-du-Pape

Day 4 Wednesday, October 9:

Côte de Beaune (B,L)

• Geologic setting of the Côte d’Or

• The South: Santenay, Chassagne-Montrachet, Puligny, le Montrachet, St. Aubin and Meursault

• Exploring Village, Premier and our first of the Côte d’Or's 40 Grand Cru vineyards

• Tasting-lunch in the Côte de Beaune

• All about oak: above Saint Romain

• The Pinot Noir wine route thru Auxey-Duresses, Monthèlie, Volnay, Pommard and Beaune's 1er Crus

• Free evening for dinner to enjoy in Beaune (On your own)

Day 5 Thursday, October 10:

Exploring Beaune (B,D)

• Underground in Beaune

• Winemaking and tasting at Burgundy negoçiant Joseph Drouhin

• Enjoy free time in Beaune's luncheon restaurant scene

• All afternoon - so much to see in historic Beaune

• A treat: Burgundy wine dinner together in Beaune

Day 6 Friday, October 11: Côte de Nuits (B,L)

• Geology and Grand Cru wines of the Corton

• North through Nuits-St-Georges

• Why are Clos de Vougeot, Romanée-Conti, Musigny and le Chambertin Grand?

• A little sleuth work in Vosne-Romanée and the 1er Crus

• Picnic lunch among the Pinot Noir giants

• See how it’s done at Louis Jadot

Day 7 Saturday, October 12: The Whole Burgundy story end to end (B,L,D)

• Along the limestone hills of the Côte Chalonnaise and Mâcon-Villages

• The whole limestone story at Roches Solutré and Vergisson

• Lunch near Solutré

• Pouilly Fuissé and its Chardonnay neighbors

• Geologic contrast where the  Jurassic limestone meets the Massif Central
